Super-Crunchy Supper Salad

Start to Finish: 35 minutes; Makes 4 servings.

3 tablespoons apple juice

3 tablespoons canola oil

1 tablespoon red or white wine vinegar or cider vinegar

4 to 6 cups torn mixed salad greens

2 medium apples or pears, cored and cut into wedges

8 ounces lean cooked beef, ham, chicken breast, or turkey breast, cut into thin bite-size strips (about 1½ cups)

2 medium carrots, cut into thin bite-size strips

1 cup thinly sliced, halved yellow summer squash

Step 1:

For dressing, in a screw-top jar combine apple juice, oil, and vinegar. Cover and shake well.

Step 2:

Divide salad greens, apples, beef, carrots, and squash among four serving plates. Drizzle dressing over salads. Makes 4 servings.
